Will I really never run out of hot water?

Not if the unit is sized right. A tankless heater is limited by flow, not by tank size, so it keeps heating as long as the tap is open. Run more fixtures at once than it was sized for and the water goes lukewarm.

Do I need a bigger gas line for tankless?

Often, yes. A tankless burner fires much harder than a tank burner, so the gas line and the meter have to keep up with it. We check the run before we quote, so that work is in the price and not a surprise later.
